Stuffed Peppers
2-3 Underwood bell peppers (I used 2, one green, one Hungarian)
1 T olive oil
1 lb ground turkey
1/2 sweet onion
2-3 cloves of minced garlic
1 cup of chopped veggies (zucchini, cherry tomatoes, mushrooms, I used cherry tomatoes and mushrooms – get creative)
1/2 rice (optional)
1-2 T chopped parsley or cilantro (optional)
1/2 cup shredded cheese (I used Parmesan)
Heat olive oil in a large skillet over medium-high heat. Add onions and garlic and cook until softened. Add turkey and cook, stirring occasionally, until browned. Stir in chopped veggies and saute until veggies are done.
Add rice and herbs if using and heat until warm. Divide the mixture evenly among the prepared peppers – you may have some filing left over.
Depending on what you put in there your dog or cat may appreciate it or you can reheat it for lunch the next day!
I cooked these in my air fryer – no heating up the house!! Spray the basket with some olive oil and cook at 350 degrees for about 9-10 minutes. Top with cheese and cook another 2-3 minutes.
In a 350 degree oven, cover with foil and bake for 30 minutes. Uncover and bake until the peppers are soft and the cheese is melted and lightly browned, another 15 to 20 minutes.
